The Isles of Scilly is home to a new rum called The Daymark 1683, which is distilled from scratch in the UK from a base of Venezuelan molasses and locally-foraged botanicals.

The rum is named after the Daymark, which is located at the highest point of St Martin’s in the Isles of Scilly. It was designed and built by Thomas Ekins as an aid to nautical navigation in 1683 and it is the earliest surviving example of a beacon in the British Isles.

The Daymark inspired the Strong family when creating the Daymark 1683 Original rum, which is a small batch rum infused with locally-grown samphire and Cornish sea salt.

Oli Strong of Daymark said: “Having spent many years drinking and enjoying rum on family holidays we were inspired by our roots in the Scilly Isles to create a sipping rum that appealed to whisky and gin drinkers. We tested, tasted and taught ourselves from scratch. We learnt, laughed and laboured to create a product we love. Seeing the global rise of rum sales has encouraged us hugely.”

The rum is produced with the assistance of the English Spirit company and it is triple-distilled in copper stills with the local botanicals, which are infused at every distillation.

The rum is then aged in British oak casks to take on its deep golden colour.
