Cape Byron Distillery, the maker of Brookie’s Byron Gin, has release a premium roasted macadamia nut liqueur. 

Mac, described as “a versatile little nutter” is made from locally sourced roasted macadamia nuts and toasted native Australian wattle seed. 

The liqueur is created by steeping roasted macadamia nuts, macadamia nut shell and wattle seed in a wheat-based neutral spirit, before adding pure spring water from Mount Warning and a touch of natural sugar cane spirit. 

Mac can be served on ice with a squeeze of lime (Easy Mac) or stirred with whisky and bitters over ice as an Old Fashioned, or even mixed as an affrogato with ice-cream and coffee. The liqueur is described as having decadent flavours of butterscotch, cocoa and coffee.

We have combined and balanced roasted macadamia with the wonderful native wattle seed into a modern and decadent liqueur. Rich, golden and 100% natural, Mac, has a long-lasting and moreish finish.”

Cape Byron Distillery is set in the heart of the Brook family’s macadamia farm, surrounded by sub-tropical rainforest, a re-generation project the Brook family has passionately established for over thirty years.
