When did you first develop a passion for wine?

For me, the whole wine thing grew from my love of food. I loved food long before I loved wine

and I became obsessed with finding perfect combinations.

It's our round - what are you having?

Some Champagne Krug please. Or you can't beat a glass of Mosel Riesling at the end of a meal for wakening up the palate - the Germans call it drinking yourself sober.


are the most under rated and over rated wines in the UK market?

I think

Sicilian wines are terribly under rated, which works in our favour as you can do very well for around a fiver. Over rated would have to be the brands that magically appear on the supermarket shelves on "half-price" deals.

If you could have three wishes to improve your working day what would they be?

An espresso machine, tasting glasses that wash themselves, and to be next door to a really good cheese shop.

How do you deal with irritating customers?

I just keep smiling.

If your profits doubled tomorrow, how would you spend the money?

A box or two of my favourite cigars would be a good start.

What's more important, what you know or who you know?

What you know and how you get that across to your customers is vital.

If you could be reincarnated, would you still work in the drinks industry?

Definitely, it's my passion.

If you could choose one person to be prime minister, who would it be?

Len Goodman, the head judge of Strictly Come Dancing, because anyone that actively wants to get involved in politics should automatically be disqualified.

Can you give us an unusual food and wine -matching tip?

Don't get too hung up on the so-called rules, experiment and enjoy yourself. Sancerre is amazing with tempura, but also works very well with take-away fish and chips.
